TASTING NOTE
Deep, juicy dark cherry fruit underlaid with a delicate note of nougat and dark chocolate. Full body, powerful and focused. Elegant precious wood spice and more delicate tobacco appeal on the palate. Long creamy finish. Fine acid structure with velvety tannins.
VINIFICATION
Hand picking and pre-selection in the vineyard. Optical sorting of the grapes at the winery. Natural fermentation in open oak fermenters. Gentle punch downs and pump overs twice a day by hand.24 Days on the skin, natural malolactic fermentation in new oak barrels. Storage and aging for 18 months in new barrique barrels on full lees. Unfined and minimal sulphur addition.
